Looking for a low fat, high protein meal?
Try this quick and easy soup made mostly with canned beans. It is one of my favorites! I love this garnished with a pinch of shredded sharp cheddar and some crushed tortilla chips.
Ingredients
1 can Black Beans
1 can Kidney Beans
1 can Cannellini Beans
1 can Butter Beans
1 can Fat Free Refried Beans
1 can Diced Tomatoes
3 cups Water
1 tsp Minced Garlic
1 tsp Onion Powder
1/2 tsp Black Pepper
Directions
Rinse all beans but the refried beans and pour into pot. In separate bowl, mix 2 cups of water with the refried beans and add to pot. Add the diced tomatoes and 1 cup of water along with the garlic, onion powder and black pepper. Bring to boil. Simmer for 30 minutes, stirring occasionally.
